Omelettes

3 eggs
Bacon grease
Bacon, sausage, & ham
Diced peppers, onion, mushrooms, tomatoes
Salt & pepper to taste
Shredded cheese

Pre-cook your choices of meat and chop up your vegetables. Heat everything but the eggs and tomatoes in a pan.
Heat a 10" cast iron skillet over high heat.
In a bowl, beat the eggs, salt, and pepper.
Grease the skillet, then when it is hot, pour in the egg mixture. Spread the egg out so it covers the entire skillet. Sprinkle shredded cheese over the whole omelette, then sprinkle the vegetables and meat over half of it. When the eggs are almost cooked, flip the empty side over the toppings.
You may need to flip the omelette over after.
When it is fully cooked, remove the skillet from the stove and slip the omelette onto a platter.
