Makes: About 5 Cups
1 15 oz Can Black Eyed Peas1 15 oz Can Black Beans
1 15 oz Bag Frozen Corn
1/2 Chopped Onion
2 or 3 Diced Tomatoes (You can use canned to make the dip last longer)
1 Cup Cilantro
1 Jalapeno (Optional)
1 Avocado
1-2 Bell Peppers
Dressing:
2 TBSP Olive Oil
2 TBSP Lime Juice
2 TBSP Vinegar
Salt to taste
(You can use Italian Dressing instead of making the dressing above.)
Mix dressing in a bowl. Combine all ingredients.
This is best if it sets for a while before eating.
Adjust the dressing to taste.
