Sweet & Sour Pork

Serves 8
The Basics and More Cookbook
1 1/2 lbs. pork, cubed
2 cups water
1/4 cup soy sauce
2 Tbsp Sugar
2 green peppers, 1 inch cubed
1 white onion, 1 inch cubed
2/3 cup pineapple chunks or tidbits (save juice for sweet & sour sauce)
1/4 cup butter

Dipping Batter:
1 egg, beaten
2/3 cup milk
1 cup flour
2 tsp baking powder
1/2 tsp salt

Sweet & Sour Sauce

Pork:
Simmer pork in water, soy sauce, and sugar for at least 20 minutes ( until cooked). You can boil it up to 45 minutes and it will become more tender and absorb the flavor. Drain.
Batter:
Combine egg and milk, then dry ingredients. Beat until smooth. Dip pork in batter and deep fat fry (at 360 degrees) until golden brown.
Vegetables:
Cook vegetables and pineapple in butter for a few minutes, keeping vegetables crisp.
Arrange pork and vegetables on a platter and pour sweet & sour sauce over.
