Oven Omelettes

Time: 5 min prep, 15-20 min bake
9 Egg Recipe Serves: 4-6 (plan on 1 1/2 to 2 eggs per person)
9 eggs
3/4 cup milk
salt and pepper for seasoning

Filling for 12 eggs:
1/4 white onion
1 bell pepper
3/4 cup of breakfast meat (sausage, bacon, ham)

1 - 1 1/2 cups shredded cheddar cheese

Preheat the oven to 350.
Beat together the eggs, milk, salt, and pepper.
Grease a jelly roll pan (bottom and sides) and pour the mixture into the pan. Spread it evenly across the pan, then bake it for 12-15 minutes (or until just set). Remove from the oven and sprinkle the vegetables and meat on one half (lengthwise) of the egg. Sprinkle cheese on top of the vegetables and meat then fold the rest of the egg over. Put back in the oven for a minute to melt the cheese.
