Crust:
2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 cup butter, softened
1 ½ cups white sugar
1 egg
1 teaspoon vanilla extract
Preheat oven to 375 degrees.
In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Spread onto a pizza pan and place in the refrigerator until hard again.
Bake 8 to 10 minutes in the preheated oven, or until barely not glossy. Remove it just barely before it turns golden.
Place pan on a cooling rack until cool.
Frosting:
8 oz cream cheese, set out for a bit so somewhat soft
1/4 c softened butter
1 1/3 c powdered sugar
1 Tbsp or so milk
In a medium bowl, beat cream cheese and butter until blended. Add powdered sugar and enough milk to make it spreadable. Combine then spread on crust.
Fruit: Approximate quantity for 12" pan. You can use whatever fruit combination you want.
6 Strawberries
6 oz raspberries
6 oz blueberries
Wash fruit then arrange on the frosting as desired.
Place in refrigerator until time to serve.
Don't make too far in advance otherwise the crust may become soggy.

This was super yummy.
ReplyDeleteI made this on a 12" pan. The crust was a tiny bit thick - it could have been spread a little thinner on a larger pan.
I baked mine for 11 minutes - it was beginning to turn golden. Since it was covered with frosting, it was fine, but it was on the verge of being overbaked.
However, it was not soggy.
