Soft Breadsticks or Cheesy Garlic Bread

Makes: 12-15 regular or 20 small
Time: prep & rise - 90 min, bake - 15 min
1 1/3 c warm water
1 pkg yeast
3 Tbsp oil
1 Tbsp honey
1 tsp salt (or garlic salt)
3-3 1/2 c flour
Butter & garlic salt

Cheesy Garlic Topping (optional)
1 stick butter, melted
1 Tbsp finely chopped garlic
1/2-3/4 c mozzarella cheese
1 Tbsp Italian Seasoning or fresh parsley


Combine water & yeast & let rest until bubbly. Add oil, honey, salt, and 1 cup flour. Mix until smooth. Add flour until a very soft dough forms. Place in a greased bowl and allow to rise until double. 
Divide into 12-15 balls (for regular size breadsticks) or 20 (for small, 6" breadsticks) and roll into ropes.
Place on a greased cookie sheet and allow to rise for another 15-20 minutes.

Preheat oven to 400.
When the breadsticks are risen, bake for 15 minutes, or until golden brown.

Melt butter and add garlic salt
When the breadsticks are baked, remove from oven and brush with melted garlic butter. 

Cheesy Garlic Bread:
Instead of making into breadsticks, shape the dough into a round loaf and bake.
Shortly before serving, preheat oven to 350. With a serrated knife, slice the top of the bread into squares, so it's scored into deep, bite-sized squares on top.
Combine Cheesy Garlic ingredients and pack into the cracks you just cut. 
Place in the oven for 15 minutes or until the cheese is fully melted.

  1. If you want a hard crust, you can brush with egg white.
    If you are not going to brush with garlic salt butter, add a bit more salt to the dough.
    These are very soft, but still crispy on the bottom
