Crust:
2 cups flour1 cup butter
3/4 cup powdered sugar
4 cups chopped rhubarb
Filling:
4 eggs
2 cups sugar
1/4 cup flour
1 tsp vanilla
1/2 tsp salt
Preheat the oven to 350.
Mix the flour & sugar together, then cut in the butter. Press into a 10x15 cookie sheet and bake for 15 minutes.
Mix together the filling ingredients in a bowl.
Remove the crust from the oven, sprinkle the rhubarb evenly over it, then pour the filling evenly over the rhubarb. Return to oven and bake for 40 minutes or until the filling is lightly browned.
