Makes: 9x9 pan
Cook time: 30-40 minutes
1/2 cup cornmeal
1/2 cup flour
1/4 tsp salt
1/4 tsp baking soda
6 Tbsp butter
1/4 cup sugar
1 egg
1 cup sour cream
1 (15 oz) can creamed corn
1 (15oz) whole corn, well-drained
Directions:
Preheat oven to 375 degrees F. Grease a 9" x9" pan.In a bowl, whisk together the cornmeal, flour, salt, and baking soda.
In another bowl, melt butter then stir in sugar. Quickly add egg and beat until well blended. Add the sour cream, creamed corn, and whole corn and mix together.
Stir the wet and dry ingredients until just combined.
Pour batter into the prepared pan and bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
